Chef Peter is Swiss, he lives and works in Norway and everywhere he goes, he takes a keen interest in local dishes. During his visit to Portugal in 2007, he took these traditional Portuguese ingredients to create a superb vegetable accompaniment. So here is.............
Chef Peter's Sweet Pepper Symphony which serves 4
This dish is one of my favourites, because you can serve it with almost everything and it only takes about 20 minutes to make. It is particularly good as an accompaniment to grilled chicken and fish.
Ingredients:
4 peppers of different colours
1 red onion
1 Chinese garlic clove (or 2 ordinary French garlic cloves)
1 tin of diced tomatoes
2 tablespoons olive oil
Method:
Cut the peppers into squares. Slice the onion and the garlic.
Measure the olive oil into a frying pan and gently heat. Add the peppers, garlic and the onions and stir for a couple of minutes. Then add the tomatoes and simmer for about 10 minutes.
Serving suggestion:
This dish is a superb accompaniment to grilled fish such as Linguada,Tuna or Swordfish but is also good with grilled or barbequed chicken.
