Modern and Traditional Portuguese Recipes - Tigelada (baked custard):
Chef Peter is Swiss, he lives and works in Norway and everywhere he goes, he takes a keen interest in local dishes. During his visit to Portugal in 2007, he took this traditional Portuguese recipe and developed it further. So here is.............
Chef Peter's Tigelada recipe which serves 4
Ingredients:
½ litre (¾ pint) of full cream milk
4 eggs
1 tbsp plain flour
100g white granulated sugar
100g light brown sugar
2 tbsp honey
1 vanilla pod
rind & juice of 1 lemon
rind & juice of 1 medium size orange
Olive oil
Method:
Beat the eggs with the sugar, honey and the flour. Add the milk and all the other ingredients.
Oil an oven proof dish with the olive oil. Turn on the oven and set to 220°C, preheat the ovenproof dish for about 10 minutes whilst the oven is heating up.
After the 10 minutes is up, turn the oven down to 180°C, carefully take the dish out of the oven and pour the milk and sugar blend into it.
Replace the dish in the oven and bake for 20 - 25 minutes at 180°C. Serve straight from the oven.
As a suggestion, Figs in Port Wine (Doce de Figos) is a superb accompaniment to Tigelada.
